cinnamon and lemon rice pudding

This is a fantastic dessert that is loaded with B vitamins. If you are stressed out, need to relax or just fancy something that is naturally sweet, then this is the best dish going.

serves 4
325 g long grain brown rice
1.5 litres rice milk
1 cinnamon stick, broken in half
Freshly squeezed juice and zest of 1 lemon
Barley malt syrup (optional)

  1. Place the rice, rice milk and seasonings in a medium-sized pan. Bring to the boil, lower the heat and simmer for 30-40 minutes, stirring occasionally. Add a little more rice milk if required. The rice should be very tender and the liquid well reduced.
  2. Serve hot or cold with a little barley malt syrup to sweeten, if liked.
